Decadently rich and irresistibly fudgy, these cookies are a chocolate lover’s dream. Made with cocoa-infused dough and studded with generous chunks of semi-sweet chocolate, they offer an indulgent, melt-in-your-mouth experience with every bite. Perfect for satisfying serious chocolate cravings or pairing with a scoop of vanilla ice cream.

Ingredients

  • Ingredients

    • 120g unsalted butter
    • 120g caster sugar
    • 120g light brown sugar
    • 1large egg
    • 1tsp vanilla extract
    • 220g plain flour
    • 1tsp baking powder
    • 0.5tsp bicarbonate of soda
    • 2tbsp Cocoa powder
    • 200g chocolate

Instructions

  • Make the Dough

    1. In a large mixing bowl, beat the butter and sugars together until light and fluffy, about 8–10 minutes. Add the egg and vanilla, and mix until fully combined.
    2. In a separate bowl, sift together the flour, cocoa powder, baking powder, bicarbonate of soda, and a generous pinch of salt. Fold the dry ingredients into the butter mixture along with the white chocolate, mixing until it forms a stiff dough. Cover the bowl and chill for at least 30 minutes, ideally 1 hour.
  • Prepare the Oven & Trays

    1. Preheat your oven to 200°C (gas mark 6) and line two baking trays with parchment paper.
  • Bake

    1. Bake one tray at a time for 10 minutes, or until small cracks start to appear on top.
  • Cool & Serve

    1. Let the cookies cool on the tray until just firm, then transfer to a wire rack. Repeat with the remaining dough. Enjoy warm or cooled.
